Your Mac's hard disk drive's file system will not be converted. Only Macs incorporating flash storage exclusively will be converted (and you don't have a choice in the matter). Since your Mac still uses conventional magnetic storage media it will remain Mac OS Extended (not APFS). Unless you are morbidly curious do not convert it to APFS on your own.

• Older Applications

I believe so, but I don't spend much time with obsolete apps. Read the following to determine how to definitively answer that question and everything else you should be considering when contemplating an upgrade: Upgrading macOS without fear. That's what I do and that's what I recommend. No risk.

Is your Mac up to date with the latest version of the Mac operating system (macOS or OS X)? Is it using the version required by some product or feature? Which versions are earlier (older) or later (newer, more recent) than the version currently installed? To find out, learn which version is installed now.
